Lemon Curd

Recipes Ingredients:

3 Eggs, beaten
-size pieces
2 c Sugar
3/4 c Fresh lemon juice
1/2 lb Butter, cut into tablespoon

Recipe Instructions:

Grated peel of 1 lemon In the top of a double boiler, combine all ingredients. Cook and stir over boiling water until thickened like pudding. Remove from heat and cool. Chill until readdy to serve. Spread on muffins, rolls, or serve over waffles or ice cream. Keeps well in Refrigerator up to 2 weeks. Yield: 3 cups
