Sweet and Sour Cucumbers

juice of
1/2 lime
1/4 cup sugar
1/2 cup olive oil
2 cups water
English cucumber, pared, seeded, as needed

Recipe Instructions:

Combine lime juice, sugar, oil and water in Sauce pan; heat until hot. Reserve. Cut cucumber lengthwise into 1/4-in. thick slices; trim slices to 3-in. x 1-in. and sculpt to create fan shape. Place cucumber fans in reserved marinade; marinate for at least 1 hour.
