East Texas Corn Bread

Recipes Ingredients:

1 c Yellow corn meal
2 ts Baking powder
1/2 ts Baking soda
1 c Buttermilk
1/3 c Flour
1 ts Salt
1 Egg
4 tb Bacon drippings

Recipe Instructions:

Preheat Oven to 400 degrees F. Place bacon drippings in Skillet in Oven while it is heating. The Skillet must be Hot before batter is added. In large mixing bowl, beat buttermilk and egg, then sift in dry ingredients, Mix well. From Hot skillet, pour l/2 grease and mix well. Pour batter into Skillet with remaining grease.
