Fresh Berries with Mascarpone Gratin

Recipes Ingredients:

1 cup Egg yolks
4 oz. sugar
3 gelatin leaves
water as needed
4 tbsp. brewed espresso
2 tbsp. Sweet Marsala
3 oz. mascarpone cheese
cinnamon to taste
nutmeg to taste
3/4 pt. raspberries
3/4 pt. blackberries

Recipe Instructions:

Warm Egg yolks and Sugar to 110 degrees F; whip to 5-second ribbon. Dissolve gelatin in water in Sauce pan; add espresso and marsala. Heat until hot. Fold mascarpone into Egg yolks. Temper with small amount of gelatin mixture; add remaining mixture. Add cinnamon and nutmeg; fold in berries.
