Potato Puffs

Recipes Ingredients:

2 Eggs 1
1/2 ts Baking powder
1 c Mashed potatoes
1/4 ts Salt
1/2 c Flour
Oil for deep-fat frying

Recipe Instructions:

In a mixing bowl, beat eggs. Add potatoes. Combine flour, Baking powder and salt; stir into Potato mixture. In a large Saucepan or kettle, heat about 1" of oil to 375 degrees. Drop mixture by heaping teaspoonfuls, four or five at a time, into Hot oil. Fry 2-3 minutes, turning once, or until golden brown. Watch closely since they brown quickly. Drain on paper towels.
