Fluffy Light Meat Loaf

Recipes Ingredients:
1 lb Ground beef
1 sm Onion, finely chopped
1 cn (6 oz.) tomato paste
1 tb Freshly chopped parsley
1/2 c Oatmeal
1 Egg, lightly beaten
3 tb Finely chopped green pepper
1/4 ts Finely chopped garlic
Or celery 1/2
ts Salt
2 tb Bran
1/4 ts Freshly ground pepper
2 tb Wheat germ
Chili sauce
Recipe Instructions:
Preheat Oven to 350 degrees.Combine all loaf ingredients, using your hands.Form into loaf and place in 9 X 5 X 3" loaf pan,cover with layer of Chili Sauce (or ketchup if desired), bake 50 minutes to 1 hour.(Do not overbake,since part of the secret of fluffiness is shorter cooking time.)Serve the Meat loaf sliced and hot.Serves 4. Variation: Half ground Veal and half ground Beef can be used for the Meat loaf - lower in calories.
